The Best Way to Seal a Butcher Block Countertop

    Types of Butcher Block

    • End grain butcher block: This type of construction of butcher block utilizes the end grain (cross grain) of the wood for the cutting surface. End grain butcher blocks are glued together, then dried under intense pressure. The end grain of the wood protects the edges of knives and other cutting tools. This type of butcher block is thick and can be resurfaced and used for years.

      Edge grain butcher block: This type of butcher block is made by the same process as the end grain, except the pieces run with the grain, and the block is less expensive. This type of butcher block can also be refinished several times, depending on its thickness

    Sealing Butcher Block Countertops

    • Apply mineral oil to the surface of new butcher block countertops using sandpaper. Pour oil onto the surface and use sandpaper to rub the oil into the butcher block. Rub the oil into the surface of the wood with the grain of the wood. Immerse the bottle of oil in very warm water before applying. Apply the first coat of oil, allowing it to sit on the surface of the wood for 30 minutes, then wipe off. Repeat the procedure several times. To keep the surface sealed and looking good, repeat this procedure once a week. This type of finish is safe for food preparation directly on the surface. Never use cooking oil to seal the countertop; it will become rancid.

      Butcher block that is not going to be used for food preparation can be sealed with polyurethane, either oil or water base. Apply with a sponge paintbrush, brushing with the grain of the wood. For the best protection, apply two to three coats. Sand each coat of polyurethane after it has thoroughly dried with wet sandpaper, before applying the next coat. Fill a flat dish with water and dip the sandpaper before sanding the polyurethane.

    Cleaning Oil-Coated Butcher Block

    • Wash the butcher block countertop with a mild solution of dishwashing detergent and wipe dry. Kill bacteria after cutting raw meat by wiping on a bleach solution. Mix 1 tbsp. bleach into a gallon of warm water. Use lemon juice poured on the countertop to remove stains. Allow to soak for a few seconds, then wash off.

      Do not allow moisture to stand on the butcher block countertop. Use a nonporous cutting board when cutting fish or fowl.

    Cleaning Varnished Butcher Block

    • Clean varnished countertops with mild dishwashing detergent. Dry with a soft towel.
