- 1). Rinse the okra to remove the outer fuzz and any dust or dirt. Discard any inferior pieces.
- 2). Place the okra in a sauce pan with water to cover and bring to a boil.
- 3). Blanche okra by boiling small pods for three minutes and large pods for four minutes.
- 4). Drain the okra and cool it down rapidly by putting it into ice cold water.
- 5). Drain the okra, put it into plastic freezer bags, label and put the bags in the freezer.
- 1). Rinse the okra to remove the fuzz, slice or leave whole and place in a sauce pan.
- 2). Cover the okra with boiling water and boil for two minutes.
- 3). Put the okra and cooking water into sterile canning jars. Leave one inch of space at the top when filling the jars.
- 4). Place sterile lids on the jars and then the bands. Do not over-tighten the bands. Finger-tight is sufficient.
- 5). Follow manufacturer's instructions for your pressure canner to process your canned okra.
