Any time of the year, take an hour or two to make a few casseroles and freeze them for the busy days ahead. Whether you choose a fancy casserole perfect for entertaining, or a simple hearty recipe your family will love, your freezer can be your best friend in the kitchen. These frozen casserole recipes are like money in the bank. These recipes are all based on the principle of once a month cooking (OAMC), that you can cook and bake an entire month's worth of meals in one day, freeze them, and save time and money.

Everything should be cooled down before it's put into the freezer, and every piece of frozen food should be tightly wrapped and well marked. Keep a notebook by your freezer and use it to keep track of the food in your freezer.
For each of these recipes, prepare the ingredients as directed except leave out the frozen ingredients. Cool the recipe in the refrigerator, stir in the frozen ingredients, then pack, wrap, label, and freeze the food. And remember never to partially cook and freeze meat (it should be fully cooked, always, before being frozen), don't let food stand at room temperature for more than two hours, and when you thaw casseroles in the microwave oven, you must cook it thoroughly immediately.
