FYI - Food Allergies

Having food allergies can and will change your life! My life has not been the same since I was diagnosed with multiple food allergies and Celiac disease about four years ago.
I can't so much as take a vitamin without contacting the manufacturer of the product first as well as food companies when I'm out food shopping.
When you are diagnosed with food allergies the doctor simply tells you to just not eat that certain food.
What the doctor doesn't tell you is, for example say your allergic to corn and you have eliminated corn from your diet but yet you still have the symptoms, you know your not eating corn but you still feel bad...
well this happened to me.
What I didn't know was the healthy fruit I was eating was gassed with ethylene gas which is derived from corn! Most companies (not all) that sell fruits and vegetables pick them unripened and gas them to ripen them just before they go to market.
Fruits and vegetables have they're own ethylene gas they produce naturally to ripen on they're own, which is of course not from corn.
Now armed with this information and you are like me, highly sensitive to corn (not all people that are allergic to corn are this sensitive) and your looking for some fruit and veggies..
well now it's not that easy.
I have found places that do not gas they're fruits and veggies but it takes allot of phone calls and reaching allot of very nice helpful people! If you are gluten intolerant or have Celiac and your trying to find foods that have no gluten..
well this is just as hard as finding foods with no corn.
A good portion of processed foods do have either corn, gluten, dairy or soy! Even natural good for you things that are minimally processed have these ingredients in them because they are natural.
Simple things like baking powder can have gluten or corn derivatives in them.
Later in this article I will provide you with some links to some good information about how to get your life allergy free.
Did you know that using Teflon cook ware, wooden utensils or even plastic ware to cook or prepare your food can add gluten or other allergy proteins to the food you are preparing? I use only stainless steel pots and pans, glass pans and dishes and stainless steel utensils.
The reason this happens is because wood, plastic and Teflon have microscopic pores and they harbor the proteins that you are allergic or sensitive to and these will seep into your food and cause you to be sick! The symptoms of food allergies can vary between patients, here is a list of some of the symptoms most people suffer with:
  • diarrhea hives (urticaria)
  • headaches
  • insomnia
  • brain fog
  • memory loss
  • irritability
  • constipation
  • hair loss
  • joint pain
  • stomach pain
  • gas
  • heart burn
  • anaphylactic shock
  • angioedema (swelling)
  • eczema
  • sinus problems
  • dark circles under eyes
  • dizziness
  • weight loss or gain
Take it from me there is allot to learn and when you have gotten your home and life free of your allergens you will begin to feel great!!
